Sugar cookies, heart shaped!

Yeah, I’m not sure why I decided to name the title to this post the way I did. I guess it just felt so right. So, I rolled off the couch at 7:45ish yesterday morning to get my son and I in the shower so I could get my cookies cutout and baked before my husband came home for lunch.

If you’re wondering why I shower with my son, our new place only has a shower. It’s definitely not because Lucian, my 20 month old, really enjoys a shower. He tolerates it, but isn’t jumping for joy over it. He found 3:30 this morning a good time to give mama a wake up call, which is why I rolled off the couch  and not out of my incredibly comfy bed.

So, back to this cookie making business. I had made the dough and rolled it out the night before. I wanted it stiff the next morning. I hate using flour to roll out my cookies. After the first roll out, they just start tasting like flour. That’s just my opinion though.

So, here we are getting ready to mix stuff up. Now would be a good time to give you my recipe. Like I said before, I’m more of a recipe seeker and tester. This particular recipe is from Sweetopia and everyone raves about it. I can honestly say, it is mighty tasty. My cookies always spread a little though. I think it may because I don’t have enough time in the day to refrigerate the dough after every step and my butter may have too much water in it.

Sugar Cookies

2  1/2 cups unsalted butter (at room temperature)
2 cups sugar
2 large eggs
3 tsp. vanilla
5 cups flour
1 tsp. salt

Preheat your oven to 350 degrees. Cream the butter and sugar together. I used a stand mixer with the paddle attachment.  It’ll take about a minute to be completely incorporated. I always try to keep the mixing to a minimum in this recipe.

I,then, added the eggs and vanilla and gave it a quick mix.

As always, sift all the dry ingredients into a bowl. I sometimes have a hard time stopping to sift, but it definitely pays off. Add all the flour and mix until the flour is just incorporated.

I roll out the dough, which is still very very sticky, between to pieces of parchment paper or wax paper and let it set overnight. The next day I pull out the dough and cut out my shapes. After I get all my shapes cut out, I wad up the odds and ends and roll them back out between the parchment paper. I let it rest while my cookies bake.

It normally takes my oven about 8 minutes to bake the cookies. Place them on a cooling rack or in my case a paper towel to let them cool completely. (I have a cooling rack on my list to buy)

So, here I rolled the dough out between two pieces of parchment paper. My husband was busy trying to stick his head in the picture so after 30 or so times I decided this picture will do. Sometimes, I swear I have two toddlers. My parents have even decided I have two toddlers. Yeah, it’s that bad. It’s what I love about him though, honest.

Here are what I chose to use. As you can see, I was a big spender for my sweetheart. My husband’s favorite was the smallest one. He said they were cute! My son’s favorite was the largest one.

Here we have some cookie bling. I forgot to put my jar of homemade sprinkles in the picture. I was going to use some of my buttercream, but then decided to use it another day. I like to get the candy melts in the bulk section of the grocery story. I heart Wegman’s and their candy selection.

Did you happen to notice there are no cookies with white chocolate on them? Mhm, Wesley made it home for lunch before I got the rest of my cookies decorated. He ate them all.. every last one. They were his cookies, after all. If you’re wondering what the date is on the cookie in the center, it’s our wedding day. The day after groundhog day. Nothing says I love you like Punxsutawney Phil declaring whether we’ll have six more weeks for winter or not.
